Valentine’s Day Linzer Shortbread Cookies with Raspberry Jam

Delicate Linzer shortbread cookies filled with artisan raspberry jam, perfect to share or gift for Valentine’s Day.

Makes: 20 cookies

Preparation time: 5 min

Resting time: 1 hour

Baking time: 13 to 15 min


Recipe :

  1. In a large bowl, cream the softened butter until smooth,

  2. Add the granulated sugar and vanilla sugar, then whisk until the mixture is light and pale,

  3. Add the egg and whisk until fully incorporated,

  4. Add the sifted flour, ground almonds, baking powder, and salt. Mix gently until a smooth dough forms without overworking it. Shape into a ball, wrap, and chill for at least 1 hour or overnight,

  5. Preheat the oven to 170°C (340°F),

  6. Divide the dough into 2 or 3 portions. Roll out on a lightly floured surface to about 4 mm thickness. Cut out rounds and remove the center from half of them,

  7. Bake for 13 to 15 minutes,

  8. Once the cookies have cooled, spread a small amount of raspberry jam on the whole cookies and place the cut-out cookies on top.

• 130 g softened butter

• 90 g granulated sugar

• 1 packet vanilla sugar

• 1 egg

• 260 g all-purpose flour

• 40 g ground almonds

• 1/2 tsp baking powder

• 1 pinch of salt

• La Cuillère Gourmande Raspberry Jam
